You will have tough beignets if you overmix the dough. Scoop the mix from the bowl onto a well-floured surface. You will need additional flour to roll the dough flat; or else, the dough will stick to your rolling pin and your hands. Flour keeps the dough from sticking to everything.

I hope you don’t mean you’re packing and/or traveling with the beignets by “come back.” Beignets do not travel well. I have never had beignets as good as the ones at Cafe du Monde. Beignets need to be fresh and warm, so eating them on the premises is a must.
